Oatmeal Muffin Recipe and a Stained Skirt

Good Morning all,

I haven't blogged in a week and that's because I wanted to write something about the tragedy in Boston but didn't know what to say without sounding pretentious so I just decided to stay low key and follow the story, grieving in my own way. All I will say is that my heart goes out to all of the people affected by this terrible tragedy and I am happy that they caught the brothers so quickly.

This weekend was a very productive one and was full of friends, family and fun. I have some lovely recipes to share with you guys! Saturday I attended a baby shower for one of my oldest friends in Charlotte, Nicole.

It was a great time and it had cake and chocolate covered pretzels which are basically my two favorite things in the world. The baby shower was animal/jungle themed. It was so cute!


 
On Sunday, Dwayne and I worked in the year and finally tacked the disaster that was our front yard. We had let the weeds go a little crazy over the fall so I decided that weeding and carrying 40 pound bags of top soil was going to be my exercise for the day.
 
 
I know that it doesn't look like much but it was actually 3 hours of work and should speak to how bad it really was! Ha!
 
Sunday nights are my favorite because we always go over to our friends house to watch either Walking Dead or MadMen whichever is in season! Right now, its MadMen - is anyone else ready to punch Don Draper in the face?
 
We decided to do a MadMen themed dinner so we had pot roast and potatoes and I made the easiest apple pie recipe ever. We also had martini's because after all - what would a MadMen themed night be without martinis?
 
Apple Cinnamon Martini
2 parts salted Carmel Stoli Vodka
3 parts apple juice
Apple Garnish
 
 
Apple Pie Recipe
 
Peel and dice 5 large apples and mix in a bowl with 1/4 cup butter, 1/2 cup brown sugar and Cinnamon.
Roll our Pillsbury Crescent rolls into the pie tin as the crust
Bake for 35 minutes or until brown

While I was baking the pie, I also decided to make some muffins for a quick breakfast and I found a great recipe using ingredients we already had!

Cranberry Energy Muffins

1 cup flour
1 cup quick oats
1/3 cup dried cranberries
1 tsp baking soda
1 tbsp baking powder
1/3 cup almond milk
1/2 cup melted butter
Vanilla and Cinnamon to taste
Mix it all together and baked at 375 for 30 minutes


I was trying to keep the MadMen theme going today by wearing my new while pencil skirt and the coffee maker decided that it was going to spray the crap out of me for no reason first thing. So now, I have to spend the rest of the day with a big brown stain on my skirt. How awesome - not.
